Tapioca Starch
Tapioca starch is a form of starch derived from the cassava plant (Manihot esculenta), a woody shrub extensively cultivated in South American countries for its starchy tuberous root, which is very rich in carbohydrates. The large roots are peeled and then ground into flour, soaked in water, and squeezed dry several times. Tapioca starch is made by purifying the starchy cassava root flour.
