Locust Bean Gum

Locust bean gum, also called carob gum, is obtained from the seeds of the Mediterranean-grown locust tree (Ceratonia siliqua). After removal of the husk, the endosperm (or gum-containing part of the seed) is ground into a fine powder.

Functionality

Locust bean gum is used as a slow releasing agent and binding agent.
